Peal garlic and slice it thin
lengthwise. Heat the oil in a wok or skillet and fry the garlic over the moderately low heat for about 5 minutes or until it turns light brown. Remove the garlic quickly with a slotted spoon and drain it on a paper towel for at least 15 minutes. The crisp slices should be stored in a jar with a tight-fitting lid, refrigerated or not as you wish. |
