Curried peanut chicken Serves 6 to 8 |
| 3 lbs. chicken parts 1/4 cup oil 1 tsp. salt 3 tsp. curry powder or to taste 1 large onion, sliced 1 green pepper cut into strips 1 tomato, skinned and sliced 1/4 cup crunchy peanut butter 1/4 cup water Brown chicken pieces in oil. Remove to pan. Stir salt and curry powder into pan drippings and cook, stirring one minute. Add onion, pepper and tomato; cover and simmer 5 minutes. Add chicken pieces, cover and simmer 30 minutes or until tender. At serving time, remove chicken and place in a dish over rice, if desired. Blend peanut butter with water and stir into gravy. Heat to boiling while stirring constantly. Spoon some sauce over chicken and serve remainder separately. |
